How do these attach?

It depends on which ones you get. They all mount with bolts into the back of them. It looks like some have one bolt and others have two.

They are usually found under Cobra or Hot Rod mirrors.

Do the ones you have use only one bolt?
Are they adjustable (the glass area move for adjustment)?

I believe the ones I have have two bolts and yes the glass moves around for adjustment. You loosen the phillips screw on the front and get the mirror to where you want it and tighten it down.

a bracket bolts to the car

then the main body slips over the top of it

then the mirror part (wich has a long threaded bar on the back) twists into the bracket

and you simply turn the mirror to tighten

I had a set of these on my 68 for a while, but couldn't get enough adjustment to make the one on the passenger side to work for me. I have the two bolt type. Nice mirror, just not enough adjustment and the angle is very limited to what you can see. I went with a pair of Chevy S10 pick up mirrors. I purchased them from the guy that does the air ride kits, Air Kwell I think. I painted them to match the car, work great. I purchased a pair of carbon fibers from the UK to go on my current project. They were made for a e30 BMW (325is). They are really nice, having the opening between the mirror and the body for air to pass through, they have the proper adjustment and a large enough mirror to see something on both sides. A friend of mine has harley mirrors which are really nice if you want chrome, so with the harley mirrors.
