I agree with CLKWRK on the oil temp in the case.
Don't you want to know the temp as the oil exits the scavange side of the pump, before the oil cooler ? I would think this is the hottest oil temp location.
With a turbo, this temp will definately be higher becasue it will include the oil from the turbo, and not be a true indicator of engine oil temp.
Right now, I have a thermostat with fan for the cooler, and I know when the fan kicks on, the oil temp is 180F.
