I was wondering what factors one should be aware of when thinking about reusing pistons (i.e. buying new cylinders and rings only). Are there things that I can look for myself? Are there things that I should have a machine shop look for? Thanks.

Measure them carefully with a micrometer and compare your measurements to those of a new piston so you know if the skirts are worn or collapsed. Obvious scoring (scratches/gouges) disqualify them. Ring land clearance is also important so measure that too. Some other things to think about are wrist pin clearance and cracks.

New cylinders generally come with pistons/rings, and are not that expensive so why bother unless you are building an engine out of a bunch of left over parts.
