Your steering wheel is likely to block some of the gauges, so locate the most important end of the gauges scale within clear view. I'd want to see <85 mph, tach redline, pressure low end, temp high end, etc. Make a mock-up with paper to get a visual on your layout before buying panel inserts and installing. You need to see 'em to use 'em. In-dash gauges are the best for visibility. Train yourself to scan the gauges and the mirrors frequently. If you have to put critical gauges under the dash, it's best to have a warning light/buzzer so you can keep your eyes on the road while you hammer on it.
